Picky eater only eating protein

Hello!
My 1 and a half old Eastern has been driving me crazy. He has a good food drive ( moment he sees the blue bowl he bee lines to eat from it ) and he's active ( causes a mess and won't leave my shoulder without a fight ) and I've done a fecal test and it's a normal parasite load ( pinworms and coccidia ) but he absolutely will not eat anything other than proteins!!

I've tried scenting his veggies with the meat ( turkey and snails ) and hiding them inside but he spits them out! Only time I managed to get him to eat it was mixing in mince and dog food but he gained a lot of weight and had a bad gum infection that took 2 of his teeth!! Since then he's been strictly on hard shell bugs and thankfully he's made a full recovery minus the permanent loss of teeth.

I've tried the food strike for 1 month and he got dehydrated from it so preferably don't want to try that again.
He's somewhat used to teeth brushing so I could consider softer foods but would require possibly daily brushing and unsure how stressful it could be.

Is there anything I can do!? Or are they normally picky?

For temps:
Cool side: 23 - 25C
Hot side: 28C, 35 - 40C ( Basking )
UVB T5 reptisun 10.0 above tank mesh Top ( roughly 5.0 inside ) halogen heat lamp.
Poops every 1 to 2 days.

He's currently liking: live snails, turkey and eggs
I've tried:
Snow peas
Green beans
Capsicum
Zucchini
Carrot
Mustard greens
Rocket
Cucumber
Berries
Pear
Watermelon
Peaches
Pre-made food gels ( example bluey buffets )

Beautiful Eastern. My Easterns seem to have seasonal preferences, but for the most part will eat just about anything. My males are a bit more picky than the females though. You can try mixing the vegetables in a food processor and then adding to some dog food or other protein. Favorites here are hard boiled eggs and chicken.
