As baby season starts, I also want to say that I am a big believer of givng my guys lots of veggies and greens right from the get go. My great eaters (a couple of them will eat a plate of veggies/greens with out anything to intice them) are the ones I had from babies. My picky eaters are the ones I got as adults and had a primary diet of cat food before I got them.

Light steaming or blanching the chayotes will make chopping and eating easier. It will not reduce the nutritional content, and if it does, for the minute or two it's "cooked," it'd be insignificant.
I almost lobbed my thumb to the floor trying to chop a huge chayote; the first 1/4 inch was almost woodlike.
