Behavior/Poo Question

Hi everyone! I’m a fairly experienced bluey owner, I’ve had my baby Ivy for over 3 years now, and I love her so much! Unfortunately, I was unable to upgrade her 40 gallon enclosure to a larger one for a while due to financial issues. She’s always had proper lighting and humidity. Now, I have a large enclosure (4 feet by 2 feet) with tons of substrate, plants, and other enrichment items. When I first put her in, she ran away very fast and hid for a while.
It’s been almost a week of her in the new enclosure, and I’ve noticed behavioral changes. She’s started to back away from any touch or even near-touch, she’s not eating, and I’ve seen her climbing the glass occasionally. I’m very well-researched and I know these are not very good signs. I also know it could also possibly be from the environment change.
Also, today she pooped for the first time in her new enclosure, and I noticed a yellow thing in it, and I would like any opinions on what could be going on with her. I am taking her to the vet sometime next week for a regular check up anyways, and I will also be talking about these things with the doctor.
I really need some possible answers so I don’t have to scour every website I can anymore! As a normal pet owner, this situation is driving me insane just thinking of my baby being unhappy and uncomfortable, so I’d appreciate input from anyone that can help so much!
