Couple of questions
Rodney eats very strangely. He doesn't chew his food. He tries to lap it up like it is water. He licks it and it will stick to his to then he swallows it. Is this normal? He also has the craziest colored eyes. They are a bright vibrant red. He always has a maniacal look on his face, even though he is really nice. He is also very skittish. Handling should fix this right? Everytime I move the top he gets very scared and burrows. I will take and post some pics later.

Red = more ripe = better/softer (unless there's some species specific mango that stays green I'm unaware of) although diced firm mango pieces could be beneficial....anyone know if pre-ripe fruit is less nutritional?
Handling will tame him down eventually. Just keep with it, and try to have him out for long periods of time instead of short little stints. That will make a huge difference.
They won't "chew" repeatedly unless they have something hard like hard catfood or snails; things like that. The usual soft mush just gets gulped down because there's essentially nothing TO chew.
Red eyes are not that unusual.

That makes me feel better. Phew. I know red eyes aren't unusual but his are crazy red. My brother afraid of him because he looks so evil.

Quigs likes to lap up food as well.
I believe less ripend fruit in most cases are just as nutritional, as they get riper they contain more simple sugars, as the complex carbs breakdown. Although I know also some green fruits contain a toxin that gets broken down as well as the fruit ripens, mulberries and crab apples are two I know of for sure that have this, it's there to discourage eating before the seeds are ripe enough to grow after they come out in their own pile of ready made fertilizer.
